If you can see the activity on their Strava, because you follow each other or it's public, that's enough. You don't need their password or account access at all.
Can you only view the activity, not log in as them? That's fine. Open the activity on Strava, tap the ··· menu in the top right of the activity page, and choose Export GPX. It downloads straight to your device. No password is required and they won't get a notification.

Yes. If you can open the activity page, because you follow each other or the activity is public, use the ··· menu on that page and choose Export GPX. It downloads to your own device with your own Strava login. Upload that file with Option A above to build the poster.
No. Viewing an activity or exporting its GPX file is a normal Strava action and doesn't send them any notification. It's a safe way to keep the poster a complete surprise.
If the activity is set to private and you can't open it, GPX export isn't possible. In that case, use Option B above: send them the gift link, they authorize with Strava themselves (no password shared with you), and a link is sent back to you to build the poster.
No. If they use Garmin, Apple Watch, Runkeeper or another app, most of these let you (or them) export a GPX, TCX or FIT file directly. Upload it the same way as a Strava export.
